with regards the Aprilia RS250 I'm about to start rebuilding, should I go for a black spray job, with Aprilia in deep red on the tank only,

I like this too, and if / when I drink something it's probably one of these.....or Dark Blue (Nastro Azzuro) with Peroni?
This could look quite good too......Also, is there a way I could get one of the above paid for by the relevant brand?

The black with the red insignia looks quite classy, but instead of a dead black what about black with a red pearl mixed into it. It will give the black this slightly reflective red property!

I would go with black, keep is simple
If anything, you would end up paying SAB for the privilege of putting their products on your bike due to copyright issues...
Plain black, red pearl could also look kewl...
